Pumpkin seeds are subtly sweet and nutty with a malleable chewy texture. Roasted pumpkin seeds are one of the most nutritious and flavourful seeds available today. They are also known as pepitas, are flat, dark green seeds. Include pumpkin seeds to nutritious sautéed vegetables or sprinkle them on top of mixed green salads. Alternatively grind the seeds with fresh garlic, parsley and cilantro leaves and mix with olive oil and lemon juice for a tasty salad dressing.
